When creating Corbin’s Confections, owners Shana and Kathy wanted to create a place where those suffering from Celiac disease, gluten intolerances, and nut allergies could go to enjoy a sweet treat without fear. Corbin’s Confections is perfect for those dealing with any gluten intolerance, wheat allergies, and other forms of gluten sensitivities. Celiac disease is an autoimmune disorder that, when triggered by gluten, damages the small intestine. Common side effects of gluten consumption for those with Celiac disease includes bloating, abdominal pain, headaches, and various other painful, uncomfortable problems. Because of this, Corbin’s Confections is happy to provide those suffering from Celiac disease or gluten intolerance with gluten free baked goods.

What is Gluten?

Gluten is the proteins commonly found in wheat, barley, rye, and other common ingredients. Gluten is in most foods, including breads, pasta, flour, beer, crackers, and many other popular snacks and meals. Those suffering from gluten allergies or intolerances can struggle with finding the right foods at the grocery store, in restaurants, or anywhere. The owners of Corbin’s Confections understand the fear that comes with food allergies, and this is why we work so hard to provide a safe space and products to enjoy. At Corbin’s Confections, we have a special flour blends that include rice flour, tapioca starch, and potato starch. This means that none of our baked goods contain any gluten, and no staff or customers are permitted to bring in any gluten or nut-based products.

Just because something claims to be gluten free, does not mean it truly is. Some manufacturers process both gluten and gluten free products in the same area, allowing the possibility for cross-contamination. Corbin’s Confections Cake Ordering Requirements

A seven day notice is required for specialty cakes, including vegan and dairy free (subject to availability). Basic birthday cakes require only a three day notice. There will be a $25 expedited fee for cakes ordered with less notice.
