Corbin’s Confections is Family Owned and Operated

Growing up, Shana always watched her mother, Kathy, bake and ice wedding cakes. As she got older, Shana found a love for baking as well. She baked to relieve stress, to celebrate, or just because. Family and friends received baked goods for nearly every occasion. When Shana’s son, Corbin, was diagnosed with a life-threatening peanut and tree-nuts allergy, she baked even more to supplement class parties and events to which he was invited.

She wished there was a place Corbin could go to grab a cupcake without fear and decided, why not create a place? Her mother wanted to help, but on one condition – the bakery HAD to be gluten free because she had Celiac Disease. This planted the seed and both mother and daughter set to work testing recipes and flour combinations. The following year, the pair opened Corbin’s Confections as the area’s first and only 100 percent dedicated gluten free, peanut free and tree-nuts free bakery.


Frequently Asked Questions

What type of flour do you use?
We use a variety of flours for each product, such as bread flour, cake flour and all purpose flour. All of our flours contain a mixture of rice flour, tapioca starch and potato starch.

What type of oil do you use?
We use canola oil in lieu of vegetable oil when baking.

Are all your products made in a dedicated gluten free, peanut free and tree-nut free facility?
Absolutely. We check with manufacturers before using an ingredient to ensure safety before using. We also do not allow our staff or customers to bring items with gluten, peanuts and/or tree-nuts into the facility.

What is the shelf-life of our products?
Each product has a different shelf life. A lot of customers have the misconception that gluten free items will be bad after one day. While that is true about certain items, it certainly isn’t true about them all! Typically, our items last an average of 3-5 days. Please remember that our products are baked fresh and have no preservatives.

Do you ever bake dairy free, egg free or vegan items?
Dairy-free, egg-free, and vegan items are available upon ordering with a minimum purchase. There is an extra charge for substitutions as the products used are not always on hand. Please be advised that we use dairy and/or eggs in all our other products. While we are very careful, we cannot guarantee that cross-contamination will not occur.

Do you do anything keto?
No. Our flour is made of rice, which has a high carb count.

Do you do sugar free?
We apologize, but we cannot do sugar free. Sugar free and gluten free is very difficult to produce and live up to our strict quality standards. For that reason, we do not bake sugar free.

Do you use soy?
Soy is present in our candy coatings, dairy free icing, chocolate chips and some of our sprinkles.

Are you corn free?
No. Corn starch is present in our flour mix, baking powder and powdered sugar.

How do I store the bread after purchasing?
We suggest you slice it into 16 slices, wrap 2 pieces each in plastic cling wrap, placing all wrapped pieces into a large freezer bag and putting the bag into the freezer. This extends the life of your bread.

Corbin’s Confections Cake Ordering Requirements

A seven day notice is required for specialty cakes, including vegan and dairy free (subject to availability). Basic birthday cakes require only a three day notice. There will be a $25 expedited fee for cakes ordered with less notice.
